Terpenes are organic compounds in plants responsible for the distinctive smells, colors and flavors of cannabis. There are

A dispensary employee when it all began in 2009, Montrose says that bad bud experiences in both the legal and illegal markets made him want to start educating the industry and consumers alike — not just on noticing the differ-

over 100 terpenes in the cannabis plant, and not only do they produce flavors, but they also help control how much THC reaches your brain, affecting how high a certain strain makes you. “There are absolutely no absolutes in the cannabis world right now,” Montrose says. “Interpreting terpenes, or Interpening, is about creating a vocabulary in conjunction with a deeper understanding of cannabis flower. “ And the Trichome Institute takes its mission quite seriously when it comes to curriculum and who es or fails. “Our rate is about 30 percent now. Most of the people taking this have been growing cannabis for years,” Montrose says of the class, which he teaches once a month at Colorado Free University. “We didn’t want to be inconsistent with standards and legitimacy of something like becoming a wine sommelier, which people study years for.” I sign up, knowing I have a lot riding here: An epic failure is sure to drain me of confidence and the esteem of my peers — and it also won’t do much for my job credentials. So I go to his four-hour course, pen and pad in hand, feeling like I’m about to take a mandatory drug test for a job at Little Caesar’s. This is a test I have to not only , but

magnifying glass to spot, and Montrose provides both as he teaches us about the three stages of trichome ripening and how to tell the difference between healthy, frosty buds and clumps of powdery mildew. “I have a few jars so you can see what spider mites and fungus gnats look like,” Montrose says as he takes us through a detailed PowerPoint presentation. “But please, for the love of God, don’t open them. There are probably some growers in here who don’t want to take any unwanted friends home.” Most of the Interpening students are employees of the legal marijuana industry, from budtenders to head growers. Montrose says he hopes his classes will become a popular thirdparty training option for pot shops; he has an agreement with The Hemp Connoisseur that requires any judge in its Cannabis Cup to be a certified level-two Interpener. Endorsements like these make him hopeful about spreading the Interpening gospel — but he isn’t the only one looking for positive . I need a ing grade on the class’s exam to gain level-two status at Interpening — and if I fail, who’ll take me seriously as a cannabis critic? After we learn how to spot flower deficiencies, Montrose teaches us how to see and smell the differences between indicas, sativas and the hundreds of hybrids in the middle. indica and indica-leaning hybrids making their presence known at the base of your nostrils and sativas and sativa-leaning hybrids hitting the bridge of your nose? As Montrose says this, I think he’s full of shit — but it later checks out with his bud examples and the dozen of strains I’ve smoked since. Of course, as the class notes, there are always exceptions. “Everyone’s senses react differently, and there are a few strains that defy the rules,” Montrose says. “Durban Poison is a famous sativa landrace, but its buds are fat and compact like an indica.” (Lucky for us, Durban Poison’s pungent scent is pretty easy to spot.) So indicas smell and look like this, sativas smell and look like that, and hybrids fall somewhere in the middle. Easy enough, right? Wrong. Even with extreme examples, the class struggles over the ten-question test. We’ve been given ten buds — five of them acceptable to smoke and five of them not — and one minute with each example. Then we have to pick out the five unacceptable buds and explain why they aren’t any good, and then select the five smokeable buds, labeling each one indica, sativa, fifty-fifty hybrid, sativa-leaning and so on. The pressure is on as we squint through handheld magnifying scopes, trying to figure out if the trichomes are milky enough, or how much lavender we smell in one particular bud. “I’ve got six acceptable ones,” one woman says with a look of concern. “You shouldn’t,” replies Montrose. She bites her lip and flips through her textbook with exasperation.
That’s the beauty of this class: There are no knowit-alls. Cannabis’s respectability is such a recent development that a person sufficiently informed in both its art and science is a rarity. There are no snarky douches interrupting the class with “Actually...” and “You forgot about...” People came here relatively blank, ready to learn. And learn we do: After three and a half hours of carefully listening to lectures on bud structures and scents, I approach my test with the zeal of a sixteenyear-old taking a driver’slicense test, eager to get on the road. And other than figuring out which hybrid is a fifty-fifty split, I am confident in my answers. “Maybe I shouldn’t have taken this high,” I say before turning my test in. Everyone laughs and agrees — but at least it’s a level playing field. Those who the exam will get a certificate in the mail announcing them as an official level-two Interpener; those who fail will have wasted about $299 in registration fees. A call with Montrose the next day informs me of my fate. “There were sixteen people in the class, and eight of them ed. One of them ed perfectly, with honors,” he says. I gasp in anticipation: I knew I was born with an uncanny eye for good pot. “You were not that person,” he continues. “You, however, ed with a score of eight out of ten. Congratulations — you’re now a certified Interpener.” A certified Interpener, with room for improvement. That means I just need to study more. Bring on the bud! about the best way to add THC, the psychotropic property of marijuana, to beer, some basic tenets exist, says Ryan Thomas, a regional director for the Beer Judge Certification Program and a Grand Master II judge. To add flavor, he suggests a process known as “dry-hopping,” but with buds. To do this, brewers typically add whole hop cones to the beer after it has been fermented, which imparts an immense amount of flavor. The same thing can be done with dry marijuana leaves. The drawback is that unless you are brewing a high-strength beer (above 10 percent ABV), it’s difficult to extract any of the THC, so not much of the high-inducing punch you’d get from eating an edible will come through. “I’ve also seen the use of tinctures and then adding that at bottling. I don’t think that’s the best way, but it gets around the low-alcohol extraction,”

in sales for a Colorado brewery that he declines to name. He won with a dryhopped (or dry-budded) American Red Ale called Reefer Red. The entry was Kure’s first foray into using cannabis in a beer, and he compares its aromas and flavors with those of its plant relative, the hop. “Some can be earthy, citrusy, grassy; they really follow a parallel line in flavor profiles,” he says. The key to making a THC-infused beer is to pick a style that is conducive to those aromas and flavors. “I had a good base recipe that I think could work with it, so I was mostly just thinking of something with a hop-forward beer,” Kure says. “IPA comes to mind first, and then I thought about this American-style amber ale, where it also has a lot of that biscuit, bready, sweet caramel profile. I thought a little bit more malt backbone could balance the hop intensity and flavor of the cannabis.” Although Kure didn’t seek out any particular cannabis strain, he smelled and tasted what he had on hand prior to incorporating it into the beer. “It was more on the earthy end — a little grassy, a little herbal,” he recalls. The next step was figuring out how to add it to the beer without damaging the volatile aromas and flavors, but also without adding any astringency or other potential off-flavors. Cannabis is a relative of the hop plant, but it has distinct properties that make its additions to beer more tricky. Hops are boiled in order to isomerize acids that impart bitterness to beer, whereas boiling cannabis could leach out tars that could impart harsh off-flavors. Kure decided to conduct two additions of the dry leaves into his five-gallon batch, adding a half ounce at the final five minutes of the boil, and another half ounce in the secondary, after initial fermentation had finished. The final product was “a bit more green, like chlorophyll, and more of that herbal flavor came through,” Kure says of the notes he received from the homebrew judges. And those judges weren’t high: The beer’s low-alcohol content meant it didn’t extract much THC. Although there is some confusion

Thomas says. “The Mad Hatter Coffee & Tea Company has some infused teas, and I’ve seen that used with meads; putting that with a 10 to 15 percent mead, it really goes nicely together.” Thomas also doesn’t recommend the addition of whole-leaf cannabis into the boil. “It would seem that would extract some of the chlorophyll and some of the green and vegetal flavors, like using too many hops,” he says. “I would say the cannabis has a dank of its own that the hops can’t even get close to, so you get a unique character from the raw flowers. There are some that I’ve had that had a really interesting character that was similar to an edible, like if you were eating a pot brownie. It works really well with an amber ale, as you have the caramel and darker notes. It’s a distinct taste, like cannabutter.”

For those looking for both flavor and THC, a combination of the two is probably the best route. as the quantity of cannabis needed for beer makes that prospect expensive. Prices have certainly come down since marijuana’s first rec sales on January 1, 2014, but with an ounce still costing between $200 and $300 at recreational dispensaries, it’s difficult to justify adding that much pot to a five-gallon batch of home brew, especially when hops are about 100 times cheaper, at $2 to $3 an ounce. Thomas suggests that home brewers try single-bottle tests at first. “A gram or two in an alcohol extract would get you about a six-pack,” he says. “I would look at a couple of grams per six-pack rather than an ounce for five gallons,” he explains. Some hop varieties, like Mosaic, will also impart that “dank” quality that both beer and marijuana enthusiasts seek. Thomas cites the use of hemp seeds by professional brewers, most notably Wynkoop’s one-off Metacool Malt-U-Wanna, and Green Cross, an IPA made with “dank” hops and hemp seeds. Thomas helped get a cannabis category added to another home-brew competition, the KROC Great American Beer Challenge in Westminster. Although there were only two entries last year, one won best in show. (The competition, which usually takes place in September, was canceled this year because of some unrelated changes in the way that the Colorado Liquor Enforcement Division interprets existing home-brew rules.) Should marijuana ever become legal at the federal level, the economics of adding pot may be too much of a hurdle in the initial stages, but Thomas still thinks there would be a viable market for cannabis-infused beers. In the meantime, he say, “On the commercial side, I know there are brewers” who experiment at home, he says, “and have small amounts for their own consumption and their friends.” For more marijuana news and reviews, go to westword.com/news.

Terpenes are organic compounds in plants responsible for the distinctive smells, colors and flavors of cannabis. There are

A dispensary employee when it all began in 2009, Montrose says that bad bud experiences in both the legal and illegal markets made him want to start educating the industry and consumers alike — not just on noticing the differ-

over 100 terpenes in the cannabis plant, and not only do they produce flavors, but they also help control how much THC reaches your brain, affecting how high a certain strain makes you. “There are absolutely no absolutes in the cannabis world right now,” Montrose says. “Interpreting terpenes, or Interpening, is about creating a vocabulary in conjunction with a deeper understanding of cannabis flower. “ And the Trichome Institute takes its mission quite seriously when it comes to curriculum and who es or fails. “Our rate is about 30 percent now. Most of the people taking this have been growing cannabis for years,” Montrose says of the class, which he teaches once a month at Colorado Free University. “We didn’t want to be inconsistent with standards and legitimacy of something like becoming a wine sommelier, which people study years for.” I sign up, knowing I have a lot riding here: An epic failure is sure to drain me of confidence and the esteem of my peers — and it also won’t do much for my job credentials. So I go to his four-hour course, pen and pad in hand, feeling like I’m about to take a mandatory drug test for a job at Little Caesar’s. This is a test I have to not only , but

magnifying glass to spot, and Montrose provides both as he teaches us about the three stages of trichome ripening and how to tell the difference between healthy, frosty buds and clumps of powdery mildew. “I have a few jars so you can see what spider mites and fungus gnats look like,” Montrose says as he takes us through a detailed PowerPoint presentation. “But please, for the love of God, don’t open them. There are probably some growers in here who don’t want to take any unwanted friends home.” Most of the Interpening students are employees of the legal marijuana industry, from budtenders to head growers. Montrose says he hopes his classes will become a popular thirdparty training option for pot shops; he has an agreement with The Hemp Connoisseur that requires any judge in its Cannabis Cup to be a certified level-two Interpener. Endorsements like these make him hopeful about spreading the Interpening gospel — but he isn’t the only one looking for positive . indica and indica-leaning hybrids making their presence known at the base of your nostrils and sativas and sativa-leaning hybrids hitting the bridge of your nose? As Montrose says this, I think he’s full of shit — but it later checks out with his bud examples and the dozen of strains I’ve smoked since. Of course, as the class notes, there are always exceptions. “Everyone’s senses react differently, and there are a few strains that defy the rules,” Montrose says. “Durban Poison is a famous sativa landrace, but its buds are fat and compact like an indica.” (Lucky for us, Durban Poison’s pungent scent is pretty easy to spot.) So indicas smell and look like this, sativas smell and look like that, and hybrids fall somewhere in the middle. Easy enough, right? Wrong. Even with extreme examples, the class struggles over the ten-question test. We’ve been given ten buds — five of them acceptable to smoke and five of them not — and one minute with each example. Then we have to pick out the five unacceptable buds and explain why they aren’t any good, and then select the five smokeable buds, labeling each one indica, sativa, fifty-fifty hybrid, sativa-leaning and so on. The pressure is on as we squint through handheld magnifying scopes, trying to figure out if the trichomes are milky enough, or how much lavender we smell in one particular bud. “I’ve got six acceptable ones,” one woman says with a look of concern. “You shouldn’t,” replies Montrose. She bites her lip and flips through her textbook with exasperation.
That’s the beauty of this class: There are no knowit-alls. Cannabis’s respectability is such a recent development that a person sufficiently informed in both its art and science is a rarity. There are no snarky douches interrupting the class with “Actually...” and “You forgot about...” People came here relatively blank, ready to learn. And learn we do: After three and a half hours of carefully listening to lectures on bud structures and scents, I approach my test with the zeal of a sixteenyear-old taking a driver’slicense test, eager to get on the road. about the best way to add THC, the psychotropic property of marijuana, to beer, some basic tenets exist, says Ryan Thomas, a regional director for the Beer Judge Certification Program and a Grand Master II judge. To add flavor, he suggests a process known as “dry-hopping,” but with buds. To do this, brewers typically add whole hop cones to the beer after it has been fermented, which imparts an immense amount of flavor. The same thing can be done with dry marijuana leaves. The drawback is that unless you are brewing a high-strength beer (above 10 percent ABV), it’s difficult to extract any of the THC, so not much of the high-inducing punch you’d get from eating an edible will come through. “I’ve also seen the use of tinctures and then adding that at bottling. I don’t think that’s the best way, but it gets around the low-alcohol extraction,”

in sales for a Colorado brewery that he declines to name. He won with a dryhopped (or dry-budded) American Red Ale called Reefer Red. The entry was Kure’s first foray into using cannabis in a beer, and he compares its aromas and flavors with those of its plant relative, the hop. “Some can be earthy, citrusy, grassy; they really follow a parallel line in flavor profiles,” he says. The key to making a THC-infused beer is to pick a style that is conducive to those aromas and flavors. “I had a good base recipe that I think could work with it, so I was mostly just thinking of something with a hop-forward beer,” Kure says. “IPA comes to mind first, and then I thought about this American-style amber ale, where it also has a lot of that biscuit, bready, sweet caramel profile. I thought a little bit more malt backbone could balance the hop intensity and flavor of the cannabis.” Although Kure didn’t seek out any particular cannabis strain, he smelled and tasted what he had on hand prior to incorporating it into the beer. “It was more on the earthy end — a little grassy, a little herbal,” he recalls. The next step was figuring out how to add it to the beer without damaging the volatile aromas and flavors, but also without adding any astringency or other potential off-flavors. Cannabis is a relative of the hop plant, but it has distinct properties that make its additions to beer more tricky. Hops are boiled in order to isomerize acids that impart bitterness to beer, whereas boiling cannabis could leach out tars that could impart harsh off-flavors. Kure decided to conduct two additions of the dry leaves into his five-gallon batch, adding a half ounce at the final five minutes of the boil, and another half ounce in the secondary, after initial fermentation had finished. The final product was “a bit more green, like chlorophyll, and more of that herbal flavor came through,” Kure says of the notes he received from the homebrew judges. And those judges weren’t high: The beer’s low-alcohol content meant it didn’t extract much THC. Although there is some confusion

Thomas says. “The Mad Hatter Coffee & Tea Company has some infused teas, and I’ve seen that used with meads; putting that with a 10 to 15 percent mead, it really goes nicely together.” Thomas also doesn’t recommend the addition of whole-leaf cannabis into the boil. “It would seem that would extract some of the chlorophyll and some of the green and vegetal flavors, like using too many hops,” he says. “I would say the cannabis has a dank of its own that the hops can’t even get close to, so you get a unique character from the raw flowers. There are some that I’ve had that had a really interesting character that was similar to an edible, like if you were eating a pot brownie. It works really well with an amber ale, as you have the caramel and darker notes. It’s a distinct taste, like cannabutter.”

For those looking for both flavor and THC, a combination of the two is probably the best route. as the quantity of cannabis needed for beer makes that prospect expensive. Prices have certainly come down since marijuana’s first rec sales on January 1, 2014, but with an ounce still costing between $200 and $300 at recreational dispensaries, it’s difficult to justify adding that much pot to a five-gallon batch of home brew, especially when hops are about 100 times cheaper, at $2 to $3 an ounce. Thomas suggests that home brewers try single-bottle tests at first. “A gram or two in an alcohol extract would get you about a six-pack,” he says. “I would look at a couple of grams per six-pack rather than an ounce for five gallons,” he explains. Some hop varieties, like Mosaic, will also impart that “dank” quality that both beer and marijuana enthusiasts seek. Thomas cites the use of hemp seeds by professional brewers, most notably Wynkoop’s one-off Metacool Malt-U-Wanna, and Green Cross, an IPA made with “dank” hops and hemp seeds. Thomas helped get a cannabis category added to another home-brew competition, the KROC Great American Beer Challenge in Westminster. Although there were only two entries last year, one won best in show. (The competition, which usually takes place in September, was canceled this year because of some unrelated changes in the way that the Colorado Liquor Enforcement Division interprets existing home-brew rules.) Should marijuana ever become legal at the federal level, the economics of adding pot may be too much of a hurdle in the initial stages, but Thomas still thinks there would be a viable market for cannabis-infused beers. In the meantime, he say, “On the commercial side, I know there are brewers” who experiment at home, he says, “and have small amounts for their own consumption and their friends.” For more marijuana news and reviews, go to westword.com/news.
